I know corn has many forms and names, In my childhood, i know corn as Bhutta ( Corn Roasted on Charcoal ) . But gradually i discover corn has many forms and names, sweet corn, corn flour, corn soup, corn curry, and many more. but today we will focus on Corn Curry.

One of the best times to enjoy corn is in the second half of summer and today’s recipe is just what you need to enjoy sweet and delicious corn in a curry base. Sweet corn is much loved in our home and in all forms especially charcoal roasted corn on the cob (butta) with a mixture of salt, chili powder, and lemon juice sprinkled over it.
Corn curry just devels on that nostalgia and takes it one step ahead to make the best of both worlds. The bhutta meets the curry along side of a lachaa parantha or steamed rice.the corn recipes has a lot of variations especially with its gravies and curries. it can be prepared either dry curry or even in tangy tomato based curries.
As a child, I remember during monsoon we used to walk upto the end of the street every day. In search of that bhutta walla uncle (hawker selling corn on the cob). The grilled corn on the cob, which was slow roasted corn on the hot sand and coal, smeared with lemon and masala. And then there used to be the boiled version. where he would store boiled corn and just before serving smear super spicy tomato and chilly chutney on it.
As an infant and toddler, mum used to give me boiled mashed corn with ghee and salt. Then I graduated to eating whole kernels of boiled corn, dad would take them off the grilled corn on the cob. Each kernel has been examined to be right for my tender tooth. And then came the phase where I would want to eat the whole thing myself but not being able to. And finally being able to conquer that bhutta on my own. What a big achievement it felt like during that time. As I grew the spice levels and flavor combinations became more and more refined.

TOMATO – 1
CORIANDER POWDER – 2 tbsp
CUMIN SEEDS – 1 tbsp
TURMERIC POWDER – 1 tbsp
RED CHILLI POWDER – 1 tbsp
GARAM MASALA – 1 tbsp

- CUT CORN IN SMALL SIZES
- BOIL THE CORN PIECES
- DRY ROAST CORIANDER & CUMIN SEEDS (JEERA)
- ADD FEW BLACK PEPPER
- ADD DRY ROASTED SEEDS TO MIXER GRINDER
- ADD CHOPPED ONION
- ADD GARLIC
- ADD GINGER
- CHOPPED ONION
- IN A KADHAI OR PAN : ADD OIL
- FRY CHOPPED ONION
- ADD MASALA PASTE WE MADE
- TURMERIC POWDER
- RED CHILLI POWDER
- ADD SALT
- CHOPPED TOMATO
- RED CHILLI POWDER
- 1/2 CUP WATER AND FRY
- 1 CUP WATER
- ADD BOILED CORN PIECES
- WAIT TILL CURRY BOILED WITH CORN PIECES
